ANGEL FOOD CAKE 
1 1/2 c. sugar
1 c. flour
2 tsp. cream of tartar
11 egg whites
1 tsp. almond or vanilla extract

Beat eggs until frothy, add 1 teaspoon cream of tartar and beat until stiff. Add sugar slowly, then flour, then add balance of cream of tartar and extract. Put in angel food pan and bake.
