SCOTCH COOKIES 
14 oz. flour (3 1/2 c.)
2 oz. cornstarch (7 or 8 tbsp.)
3/4 lb. butter (unsalted)
1/2 c. confectioners sugar
1/2 tsp. vanilla
1 sm. jar of Guava jelly

Sift flour and cornstarch 3 times together. Cream butter and sugar. When creamed, add flour and cornstarch, 1/2 teaspoon vanilla. Pat flat with hands and roll out between waxed paper or pastry cloth. Cut with small cookie cutter. Cut small hole in 1/2 cookies and bake at 350 degrees for 15 minutes or until light brown. Cool and put 1/2 teaspoon guava jelly on whole cookie and top with cookie with hole. Cookies are fragile. Handle easy.
