CARROT ZUCCHINI MUFFINS 
3/4 c. orange juice
1/2 c. Land O Lakes lightly salted country morning blend, melted
1 egg
1 c. all-purpose flour
1 c. whole wheat flour
1/2 c. sugar
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1 c. shredded carrots
1 c. shredded zucchini
1/2 c. nuts

Heat oven to 400 degrees. In large bowl combine orange juice, blend and egg. Add all remaining ingredients except carrots and zucchini. Stir just enough to moisten. Fold in carrots, zucchini and nuts. Spoon into greased muffin pan. Bake for 18-20 minutes. 1 dozen or more.
