APRICOT CHICKEN 
3 lbs. chicken, cut up
8 oz. apricot preserves
8 oz. Russian dressing
1 pkg. onion soup mix

Mix preserves, Russian dressing and onion soup together. Place a small amount of the bottom of a glass baking dish. Arrange chicken in dish so that pieces are not on top of each other.

Pour remaining preserve mixture over chicken. Bake uncovered for 1 hour at 350 degrees. Serve over rice.
