CARROT CAKE 
2 c. sugar
2 c. flour
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1/4 tsp. nutmeg
1 c. cooking oil
3 c. finely shredded carrots
4 eggs
1/2 c. chopped walnuts

Combine ingredients. Beat at medium speed 2 minutes.

Pour batter into greased and floured bundt pan. Bake at 350 degrees 30 minutes.

Put pan on bread board and it should fall out.

Note: 3 - 9 inch round pans, greased and floured, can be used. Bake at 375 degrees 20-25 minutes.

Frost with Cream Cheese Frosting:

6 oz. cream cheese
3 tbsp. butter
2 tbsp. sweet or sour cream

Blend in 3 cups powdered sugar.
