ZESTY ZUCCHINI SOUP 
1 lb. Italian sausage, casings removed
2 c. celery, cut 1/2" pieces on angle
2 lbs. zucchini, cut in 1/2" pieces
1 c. chopped onion
2 qts. canned tomatoes
2 tsp. salt
1 tsp. Italian seasoning
1 tsp. oregano
1 tsp. sugar
1/4 tsp. garlic powder
2 green peppers, cut into 1/2" pieces

Brown and drain sausage. Add celery and cook 10 minutes, stirring occasionally. Add other ingredients except green pepper and simmer 20 minutes, covered. Add green peppers and cook, covered for 10 minutes. Makes 3 1/2 quarts and serves many.
