MEXICAN LASAGNE 
1 1/2 lb. ground beef
1 can chopped tomatoes
1 pkg. taco seasoning
10-12 corn tortillas
2 c. sm. curd cottage cheese
1 c. Monterey Jack cheese
1 egg
1/2 c. grated cheddar cheese
2 c. shredded lettuce
1/2 c. chopped tomatoes
3 green onions
1/4 c. sliced olives

Brown ground beef and add taco seasoning and canned tomatoes. Cover bottom and sides of a 9x13 pan with tortillas. Pour beef mixture over tortillas, then place second layer of tortillas over beef mixture and set aside.

Combine cottage cheese, Monterey Jack cheese and egg. Pour this mixture over second layer of tortillas. Bake at 350 degrees for 30 minutes. Remove from oven and sprinkle with remaining ingredients and serve.
