PAM'S PEANUT BRITTLE | |
1 c. white Karo syrup 1 lb. or 3 c. raw peanut or pecans 2 c. sugar 1 stick butter Put sugar, Karo syrup and butter in large saucepan. When butter is melted, add peanuts or pecans. Stir the mixture constantly to avoid scorching. Cook and stir on medium-high heat until the peanuts are a nice golden color. (It's so easy to overcook or undercook peanut brittle so don't get discouraged if the first batch isn't perfect. It takes practice.) Once the peanuts are a nice golden color, then add: 1/2 tsp. salt 1 rounded tsp. baking soda Stir in the above 3 ingredients quickly and pour the mixture onto a greased cookie sheet. Let harden and break it up in pieces. Put it into a covered container immediately. Enjoy! (It's important to not stir the mixture once it is on the cookie sheet!) |
