BROCCOLI CHEDDAR SOUP 
1/2 c. chopped onion
1/4 c. butter
1/4 c. flour
1/2 tsp. salt (optional)
4 c. milk
2 c. (8 oz.) cheddar cheese
1 pkg. frozen chopped broccoli, cooked and drained

Saute onion in butter. Blend in flour and salt. Gradually add milk and cook, stirring constantly until thickened. Add cheese and broccoli. Stir until cheese is melted. Makes 6 (1 cup) servings.
