CHICKEN CACCIATORE 
1 c. thin sliced onions
1/4 c. oil
Garlic cloves, about 3 sections minced
Boneless chicken breasts
6 oz. tomato paste
15 oz. peeled tomatoes, canned
1 c. dry white wine
2 tbsp. oregano
1 tbsp. basil
1 tbsp. parsley
1 c. mushrooms, optional

Heat oil and add garlic. Flour chicken and lightly brown. Remove chicken. Brown onions lightly. Mix in salt and pepper to taste, tomato paste, peeled tomatoes, wine, oregano, basil and parsley, and mushrooms. Return chicken to skillet and simmer 45 to 50 minutes.
