PEACH AND POPPY SEED MUFFINS | |
2/3 c. pureed peaches (use Junior baby food, if desired) 1 tsp. baking soda 10 tbsp. butter, softened 1 c. sugar 2 eggs 1 1/4 c. flour 1/4 tsp. salt 1/2 tsp. vanilla 3 tbsp. poppy seeds Stir baking soda into peaches (they will foam up). Cream the butter with the sugar. When smooth, add the eggs, one at a time. Alternately add flour and peach puree, then the salt, vanilla, and poppy seeds. Pour batter into well- greased muffin tin, filling each cup nearly to the top. Bake 20-25 minutes in a preheated 350 degree oven until muffins test done. Remove to a rack to cool. Makes 12 large muffins. |
