SALAMI AND POTATO SALAD | |
1/2 c. salad oil 1/4 c. lemon juice 1/2 tsp. sugar 1 bay leaf 1/2 tsp. pepper sauce 1/2 c. chopped onion 1/2 lb. salami 1/3 c. white wine or white vinegar 1 1/4 tsp. salt 6 crushed juniper berries 1/4 c. chopped parsley 6 med. potatoes, peeled & sliced 4 c. shredded cabbage 1 c. diagonally sliced carrots Boil potatoes until tender. In a large bowl, mix oil, white wine or vinegar, lemon juice, salt, sugar, juniper berries, bay leaf, parsley and pepper sauce. Add sliced potatoes, onion, cabbage and carrots. Cover and chill at least two to three hours. When ready to serve, remove bay leaf. Cut salami slices in quarters. Add to other ingredients in bowl and mix well. |
