LAYERED BEEF - ZUCCHINI BAKE 
2 med. zucchini, shredded
1 c. shredded sharp cheddar cheese
3/4 c. wheat germ
1 egg
1 tsp. salt
1/2 tsp. dry basil leaves
1/4 tsp. oregano
2 tbsp. flour
1/2 lb. lean ground beef
1 onion, minced
1/2 c. diced celery
1/4 tsp. pepper
1 (8 oz.) can tomato sauce

Mix zucchini, 1/2 cup cheese, 1/4 cup wheat germ, egg, 1/2 teaspoon of salt, and herbs. Press into shallow 1 1/2 quart baking dish. Sprinkle with flour. Crumble meat into skillet. Add onion and celery. Cook, stirring until beef loses red color. Lay on zucchini layer. Spread top with remaining tomato sauce and cheese. Bake at 400 degrees about 20 minutes. Makes 4 servings.
