CRAYFISH PIE 
1 tsp. lemon juice
1 lb. crayfish
1/2 c. green onions, chopped
1/2 c. parsley, chopped
2 tbsp. butter
2 cloves garlic, crushed
1 tbsp. seafood seasoning
1/3 c. whipping cream
3 tbsp. parmesan
1/4 c. dry vermouth
1/2 pkg. puff pastry
1/2 lb. gouda cheese, cut into pieces

Simmer butter, crayfish, onions, garlic and parsley until crayfish are tender. Add cream, parmesan, vermouth and seasoning. Simmer until liquid is absorbed; set aside to cool. Bring pastry to room temperature. Flour and roll out for 10 inch pie shell, with pastry extending WELL over sides. Put pastry in greased pie plate. Add gouda; then crayfish. Fold pastry over top and twist to seal. Bake at 350 degrees for 30 minutes.
