STREUSEL CAKE 
Crumbs:

2 tbsp. butter
1/2 cup brown sugar
1 tsp. cinnamon
2 tbsp. all-purpose flour
1/3 cup nuts, chopped (optional)

Combine all ingredients above and beat well.

Cake:

1 1/2 cups all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
3/4 cup sugar
1/4 cup (1/2 stick) butter
1 egg (unbeaten)
1/2 cup milk
1/2 tsp. vanilla

Preheat oven to 350°F.

Beat together butter, sugar and eggs. Add vanilla to milk. Alternate adding dry ingredients with milk. Pour into a greased and floured 9-inch square pan. Sprinkle crumbs over batter. Bake. When fork comes out clean, cake is done.

Baking time: 20-30 minutes.

Variation: Sliced apple may be placed on batter before sprinkling on crumbs.
