4 hens

Rub inside and out with:

1 c. finely chopped walnuts
1/4 c. olive oil
1 tsp. salt
1 tsp. celery salt
1 tsp. poultry seasoning
1/2 tsp. rosemary

Bake at 325 degrees for 1 1/4 to 1 1/2 hours. Baste with melted butter, if needed. These are great with the crab stuffing from the previous recipe. If stuffing, bake 1/2 hour, then stuff and continue baking.
