CHEESY VEGETABLE SOUP 
2 tbsp. chopped onion
1 tbsp. butter
1 c. frozen whole kernel corn
1/2 c. chopped broccoli
1/4 c. shredded carrot
1/4 c. water
1 (10 3/4 oz.) condensed cream of potato soup
1 c. milk
1/4 c. shredded cheddar cheese, 1 oz.
1 oz. provolone cheese, cut up
Pepper

In a medium saucepan cook onion in hot butter until tender. Add corn, broccoli, carrot, and water. Bring to boiling, reduce heat. Cover and simmer for 10 minutes or until vegetables are tender. Stir in soup, milk, cheese and pepper. Cook and stir over medium heat until cheese is melted and mixture is heated through. Makes 4 side dish servings.
