PINTO BEAN MOCK CHICKEN LEGS 
1 onion, grated
6 tbsp. butter
1/2 tsp. pepper
1/2 clove garlic, minced
1 tsp. salt
1/2 tsp. celery salt
1 1/2 c. mashed, cooked pinto beans
1/3 c. pinto bean juice
1 egg, beaten
Bread or cracker crumbs

Melt butter; add onion and cook gently 5 minutes. Add next 4 ingredients. Blend bean juice with mashed beans, add to onion mixture. Pour into dish and chill until very cold. Form into shape of chicken legs or nuggets. Roll in egg and bread crumbs. Chill again until firm. Deep fry at 380 degrees until nicely browned. Insert stick to resemble chicken leg. Serve hot with favorite cheese sauce if desired.
