COCONUT CUSTARD PIE 
1 (12 oz.) can coconut
1 1/2 sticks melted butter
8 eggs
3 c. sugar
1 c. buttermilk
2 tsp. vanilla
2 Pillsbury "All-Ready" pie crusts

Beat eggs, add vanilla, buttermilk, sugar, and melted butter - mix well. Add coconut and mix well again. Pour into two uncooked, prepared pie shells. Bake at 300 degrees for one hour or until center of pie is firm. Makes two delicious pies that can be served warm or chilled. "Homemade" whipped cream is a terrific topping - but make "homemade", or it won't be authentically "old-fashioned"!
