GREEK TRIANGLES PUFF (Tyropitas)
1 (16 oz.) pkg. phyllo dough
1/2 lb. shredded Muenster cheese
1 (6 oz.) pkg. cream cheese
1/4 c. cream style cottage cheese
1 egg, beaten
1 tbsp. grated raw onion
3/4 c. melted butter
1/2 c. finely chopped spinach

Beat together 3 cheeses, egg and onion until smooth. Take 2 sheets of phyllo dough out of package, keeping remaining sheets covered with a towel to prevent it drying out. Placing the 2 sheets one on top of the other, cut sheets into 3 strips lengthwise. Each strip will be about 3 inches wide and 12 inches long.

Place 2 teaspoons cheese mixture in one corner of a strip. Fold dough over mixture to right edge, fold up, then over to left edge, all the way up the strip, making a triangle. Cut strips and make triangles until you run out of phyllo dough or run out of mixture. Place on ungreased baking sheets and bake 20 minutes at 400 degrees. This appetizer is a big hit with a crowd.

Serves 15.
