SURPRISE CARROT CAKE 
CAKE:

2 c. flour
1 3/4 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 c. oil
3 eggs, beaten
3 c. shredded carrots

Combine dry ingredients; set aside. Combine eggs, oil, carrots. Fold into dry mixture.

FILLING:

1 (8 oz.) pkg. cream cheese, soft
1/4 c. sugar
1 egg, beaten

Combine cheese, sugar and egg; mix until well blended. Reserve 2 cups cake batter; pour remaining batter into greased and floured Bundt pan. Pour cream cheese mixture over batter, centered. Spoon remaining batter over cream cheese mixture. Bake at 350 degrees for 55 minutes.

Optional: Sprinkle with confectioners sugar when done.
