CHICKEN ENCHILADA CASSEROLE 
1 chicken, stewed and boned
1 can cream of mushroom soup
1 can cream of chicken soup (or broth)
1/2 c. Rotel tomatoes
1 sm. onion, chopped
Dorito chips
1 1/2 c. cheese

Mix first 5 ingredients together. In casserole dish, cover bottom with Dorito chips. Then place 1/2 of above mixture, 3/4 cup cheese. Repeat. Bake at 400 degrees for 30 minutes. Serves 8-10.
