BEST - EVER SUNDAY CHICKEN 
2 c. self-rising flour
1 1/2 tsp. salt
2 tsp. dried whole thyme
2 tsp. paprika
2 eggs, beaten
2/3 c. milk
1/4 c. lemon juice
5 lbs. chicken pieces
vegetable oil

Combine first 4 ingredients in plastic bag and shake to mix; set aside. Combine eggs, milk, and lemon juice. Stir well. Skin chicken, if desired. Place 2 or 3 pieces at a time in bag and shake well, then dip in egg mixture and back into bag mixture; shake again. Fry in oil until crisp and golden brown.
