MIRACLE CUSTARD PIE | |
2 c. milk 4 eggs 1/2 c. sugar 1/2 c. flour 1/4 c. butter, cut up 1 tsp. vanilla 1/4 tsp. salt 1 c. flaked coconut In blender container combine milk, eggs, sugar, flour, butter, vanilla, and salt. Cover; blend about 10 seconds or until mixed (do not over blend). Stir in coconut. Pour into a greased 9-inch pie plate. Bake in a 350 degree oven for 40 minutes or until knife inserted halfway between center and edge comes out clean. Cool, then chill. When the pie comes out of the oven, it will be puffy and golden. As the pie cools, it will sink in the crust. For best results, cool the pie to room temperature, then chill. Plan to serve it the same day and don't forget to refrigerate any leftovers. Serves 8. |
