CHINESE MUSHROOM STEAK 
Preparation time: 20 minutes. Cooking time: 1 hour and 10 minutes. Serves: 4.

1 1/2 lbs. round steak, cut into bite-sized pieces
2 tbsp. oil
2 cloves garlic, minced or pressed
2 tbsp. soy sauce
1 to 1 1/2 tsp. salt
1/2 c. water
1 med. onion, coarsely chopped
2 c. green pepper, cut into 1-inch pieces
1 lb. whole fresh mushrooms, sliced
2 tbsp. cornstarch mixed with 1 1/2 c. water
4 fresh tomatoes, quartered

1. In a large skillet, heat oil. Add beef. Brown quickly. Reduce heat.

2. Add garlic, soy sauce, salt and water.

3. Cover. Simmer for 45 minutes or until meat is tender.

4. In another pan, saute onion, green pepper and mushrooms. Add to meat. Cook, uncovered, for 10 minutes.

5. Stir in cornstarch mixture. Cook until thickened.

6. Garnish with tomatoes. Serve immediately.

Good served with: Steamed rice or noodles, broccoli and crusty bread.
