LEMON SANDWICH COOKIES 
1 c. flour
1/4 c. sugar
1/4 tsp. baking soda
9 tbsp. butter, softened
1/2 tsp. vanilla
1 1/3 c. confectioners' sugar
1 tbsp. lemon juice
2 tsp. lemon peel

In large bowl, mix flour, sugar and baking soda. Cut 6 tablespoons of butter in pieces. Knead butter and vanilla into flour mixture until well blended and holds together. Roll out half of dough on lightly floured board, about 1/8 inch thick.

With 1 inch cookie cutter, cut dough into circles. Place on ungreased cookie sheet. Bake at 350 degrees for 8 minutes. Cool on rack. Bake with remaining dough. Let cool. Make filling.

In small bowl, using a mixer, mix confectioners' sugar, lemon juice, lemon peel and 3 tablespoons butter until blended. Spread small amount of 1 cookie and top with another cookie. Makes 4 1/2 dozen.
