2 large eggs
2 cups sugar
2/3 cup applesauce
1/3 cup vegetable oil
2 tsp. vanilla
1 tsp. each baking soda
1 tsp. ground cinnamon
1 tsp. salt
3 cups flour
3 cups coarsely chopped apples
1 cup chopped walnuts

Preheat oven to 350°F.

Bake in a greased and floured 13 x 9-inch pan, or spray with non-stick spray.

Beat together eggs, sugar, applesauce, oil, vanilla, baking soda, cinnamon and salt.

Stir in flour. Add apples and nuts.

Bake for 50 to 60 minutes or until toothpick inserted in center comes out clean.

Ice with Cream Cheese Icing.

Cream Cheese Icing:

8 oz. cream cheese
1 stick butter
5 1/2 cup confectioners sugar

Beat together.
