CHICKEN CORDON BLEU 
4 chicken breasts, split, boned & skinned
8 (1 oz.) slices cooked ham
8 (1 oz.) slices Swiss cheese
3 tbsp. fresh parsley, minced
1/4 tsp. pepper
1 egg, beaten
1/2 c. Italian bread crumbs
1/4 c. butter
1 can cream of mushroom soup (undiluted)
8 oz. carton sour cream
1/3 c. dry sherry
4 oz. can sliced mushrooms

Flatten chicken to 1/4-inch thickness. Place slice of ham and slice of cheese in center of each chicken piece. Sprinkle with parsley and pepper. Roll up lengthwise and secure with wooden picks. Dip each chicken breast in egg. Roll in bread crumbs. Melt butter in skillet. Brown chicken on all sides. Remove chicken to 12 x 9 x 2-inch baking dish. Leave drippings in skillet, add remaining ingredients and stir well. Pour sauce over chicken.

Bake uncovered at 350 degrees for 40 to 45 minutes. Serves 8.
