LEMON CHEESECAKE BARS 
1 (18.25 oz.) pkg. lemon flavor cake mix (not pudding type)
1/2 c. butter
3 lg. eggs
2 pkg. (8 oz.) cream cheese (cut in chunks, room temperature)
1/2 c. granulated sugar
1/2 tsp. vanilla
2 tsp. lemon juice
confectioner's sugar (optional)

Heat oven to 350 degrees. Grease and flour 13 x 9 x 2 baking pan. Mix cake mix, butter and 1 egg in large bowl until crumbly. Press in bottom of prepared pan. Bake 8 minutes. Remove from oven. Meanwhile in medium bowl with mixer, beat cream cheese until fluffy. Mix in remaining 2 eggs, granulated sugar, vanilla and lemon juice until blended and smooth. Pour on hot crust. Bake 25 minutes longer until top edges are golden brown. Dust with confectioner's sugar. Cool completely in pan on rack. Cut in squares. Store in refrigerator. Makes 48.
