DUCK AND SAUERKRAUT | |
2 ducks in pieces 1 med. onion, chopped 1/4 stick butter 1/4 tsp. salt Freshly ground pepper 1 lb. kraut or more 1 tsp. caraway seed 1 c. canned chicken stock Brown ducks in butter slowly. Add onion and saute until soft. Add all other ingredients, cover and simmer 10 minutes, after which lift duck on top of kraut, which should have been washed in sieve under cold water and squeezed dry. Cover and cook another 20 minutes. Serve with mashed potatoes, apple butter and toasted rye bread. Serve 4. |
