HERBED PEA SALAD 
2 (10 oz.) pkgs. frozen peas
1/2 c. chopped celery
1/4 c. chopped green onion
1/4 c. chopped pimiento
2 c. cubed pepper cheese
1 c. Ranch dressing
1 c. herb-flavored croutons

Cook and drain peas. In a large bowl, mix peas, celery, green onion, and pimiento. Fold dressing into vegetable mixture. Cover and refrigerate 3 hours or overnight. Just before serving, fold in cheese and croutons. Serves 8.
