SALMON CASSEROLE | |
1 can (1 lb.) salmon, drained, boned, flaked 1 c. croutons (cheese flavored) 2 tbsp. green pepper, diced 2 tbsp. parsley, chopped 1 lg. onion, minced 2 tbsp. melted butter 1 c. grated Cheddar cheese 1/2 c. milk 3 lg. eggs, beaten 1/2 tsp. salt 1/8 tsp. pepper (optional) 1/4 c. lemon juice Remove bones from salmon add butter. Add all ingredients. Blend well. Turn into a greased 1 1/2 quart covered casserole. Bake 1 hour at 350 degrees. Maybe served with cream of mushroom sauce. |
