PICKLED BEETS 
6 or 7 pts. beets, boil and peeled
2 c. water, from beets
2 c. vinegar
2 c. sugar
1 tbsp. salt
1 tbsp. pickling spices

Make syrup of water, vinegar, salt, and sugar. Place spices in a bag, bring to boil and cook for 5 minutes. Put beets in jars, pour syrup over beets and seal jars.
