PINEAPPLE RICE PUDDING 
1 c. cold cooked rice
1 (8 oz.) can crushed pineapple, well drained
2 c. vanilla pudding
Nutmeg (optional)

In medium bowl, stir together rice, pineapple, and pudding until well blended. Spoon into dessert dishes. Sprinkle with nutmeg. Serve chilled. Makes 4 servings.
