GROUND BEEF CASSEROLE 
1 lb. ground beef
1 c. onion, diced
1/2 lb. fresh mushrooms, sliced
Salt & pepper to taste
1 c. condensed cream of mushroom soup
1/2 c. rice
1 1/4 c. water
1 c. Mozzarella cheese, grated
2 tbsp. grated Parmesan cheese

Combine ground beef, onion, mushrooms, salt and pepper in pan and brown; drain grease. Add soup and bring to a boil over medium heat. Take off stove. Cook 1/2 cup rice with water until done. Put cooked rice in large pie pan. Cover with beef mixture. Sprinkle with cheeses. Bake in oven at 400 degrees until cheese is melted and lightly browned.
