STIR-FRIED ZUCCHINI 
3 tbsp. vegetable oil
1 lb. sm. zucchini
1 med. onion, sliced
2 tbsp. sesame seeds
1 tbsp. soy sauce
1/2 tsp. salt

Heat oil in large skillet over medium-high heat. Halve the zucchini and cut in lengthwise strips. Add zucchini and onion to oil and cook, stirring frequently, 5-10 minutes until tender-crisp. Quickly stir in sesame seeds, soy sauce and salt. Serve piping hot. Serves 4.
