RAW APPLE CAKE 
3/4 c. butter
1 1/2 c. white sugar
2 eggs, beaten
2 1/4 c. sifted flour
1 1/2 tsp. baking soda
1/2 tsp salt
3/4 c. cold coffee
1 tsp vanilla
3 c. chopped apples

Mix first: Grate rind of 1 large orange or 2 small oranges. Put through meat grinder, the pulp of the orange, 1 c. raisins. Cut up 1/2 c. nuts. Take 1/2 of this mixture for cake, other half for frosting mixed with powdered sugar.
