SHOESTRING SALAD 
1 c. grated carrots
1 c. diced celery
1/2 c. diced onion
1 c. boned chicken or cut-up ham
3 hard-boiled eggs, cut up

Marinate ingredients except eggs in 1 cup mayonnaise. Just before serving, add eggs and 1 can shoestring potatoes and 1/4 cup slivered almonds. Crab, shrimp, or tuna can be added instead of chicken. You may also want to add a little green pepper.
