WELSH RABBIT 
1/4 c. butter
1/2 c. all-purpose flour
1/2 tsp. salt
1/2 tsp. mustard
Pinch of cayenne pepper
2 c. milk
1 tsp. Worcestershire sauce
2 c. shredded cheddar cheese
Toasted white or rye bread slices

In 2 quart saucepan over low heat, melt butter. Stir in flour, salt, mustard and cayenne pepper until well blended. Add milk and Worcestershire sauce. Cook, stirring until thickened. Add cheese and cook, stirring just until cheese is melted and well blended. Pour hot cheese mixture over warm toast and serve immediately. Serves 6.
