EGG FOO YONG 
1 1/2 c. bean sprouts
3/4 c. onion, thin sliced
1/4 c. thin sliced celery strips, about 2 inches long
8 eggs
1 tsp. soy sauce
1/4 tsp. pepper
1 1/2 c. cooked meat (ham, shrimp, crab)

Drain bean sprouts, pressing out water. Mix well with meat and onions. Beat eggs slightly with fork. j Add pepper and soy sauce; pour eggs over ingredients, mix lightly. Pour 1/4 cup mixture for pancake into hot frying pan containing hot oil. Lower heat and cook until set (about 3 minutes). Turn over carefully (do not turn more than once).
