GUACAMOLE SALAD 
1 bunch salad greens
2 (4 oz.) pkg. alfalfa sprouts
3 ripe avocados, peeled and pitted and cut into eighths
3/4 onion, cut up
1 tbsp. lemon juice
1 1/2 tsp. salt
3/8 tsp. freshly ground black pepper
1/2 green pepper, sliced into 4 rounds
1/2 lb. cooked shrimp
Frito corn chips

Cover 4 dinner plates with salad greens, then with alfalfa sprouts. Place avocado, onion, lemon juice, salt and pepper in food processor bowl and process with metal blade until smooth. Spread on top of alfalfa sprouts. Put a round of green pepper on each plate; place shrimp in center of round. Garnish each salad with handful of crushed Fritos. Serves 4.
