MANDARIN SALAD 
1 sm. head lettuce, torn into bite-size pieces
1 bunch Romaine, torn into bite-size pieces
1 med. sized onion, thinly sliced & separated into rings
1 can (11 oz.) mandarin oranges, well drained
1 avocado, sliced

This salad, except the avocado, may be prepared ahead of time and stored in covered bowl in refrigerator. Just before serving, add avocado and oil dressing. Serves 8.

OIL DRESSING:

1/2 c. olive oil
1/4 c. wine vinegar
1 tbsp. salt
1 tbsp. sugar
1 tsp. freshly ground pepper
1 clove garlic, cut in pieces

Measure all ingredients in jar and shake well to blend. If refrigerated, allow to come to room temperature before using. Remove pieces of garlic, shake well and pour amount desired on salad.
