GARLIC POTATOES | |
3 tbsp. olive oil 1/4 tsp. salt Dash pepper 6 lg. cloves garlic, smashed & peeled 1 lb. sm. new potatoes (about 10) Scrub and dry the potatoes. If using larger potatoes, cut them into chunks. Put the olive oil in a dish just large enough for the potatoes. Coarsely cut the garlic and add with the spices. Add the potatoes and stir to coat them. Cover with plastic wrap. Microwave on high for about 10-12 minutes, stirring once to redistribute the potatoes. They are done when the tip of a knife easily pierces to the center of the potatoes. For 4 pounds of potatoes, use: 15 cloves of garlic, 3/4 cup oil and 1 teaspoon salt. Microwave 20 minutes. |
