POTATOES, LOX AND ONIONS BRUNCH | |
1/2 lb. lox 2 lg. sliced onions Butter 10 potatoes 2 c. milk and milk for soaking lox Salt if needed and pepper Soak lox in milk for 10 minutes Drain and cut lox into small pieces. Peel and cut potatoes into small chunks. Season with pepper (a small amount salt if using nova). Saute onion until lightly brown. Remove from pan and stir-fry lox. Combine with onions. Butter a baking dish and layer in potatoes and lox and onions. End with layer of lox and onions. Pour milk over all, dot with butter. Cover and bake at 350 degrees for 1/2 hour until potatoes are almost done. Uncover and bake at 425 degrees until potatoes are soft and brown. Stir several times until all potatoes are brown. (Correct seasoning if needed). Excellent for large group brunch. |
