COUSCOUS WITH RAISINS 
1/4 c. raisins
2 tbsp. butter
1/2 c. onion, chopped
1 1/2 c. boiling water
2 tsp. lemon juice
1/4 tsp. ground cumin
1 c. quick-cooking couscous
Salt to taste

Put raisins in a small bowl. Cover with lukewarm water. Soak for about 20 minutes. Drain. Melt butter in a saucepan over low heat. Add the onion. Cook and stir until wilted but not brown. Add the boiling water, raisins, lemon juice and cumin. Bring to a boil. Remove from the heat. Add the couscous. Add salt. Cover and let stand for 5 minutes. Uncover and fluff the couscous with a fork. Serves 4.

Adding a little cinnamon to the ingredients makes this dish pop. I generally do couscous the old fashioned way, but this quick trick is good too. The only thing missing for me was the flavor of cinnamon; just add about 1/4 teaspoon (or a little more, to your taste) to the sauteed onion mixture just before you add the boiling water and other ingredients.
