DIJON CHICKEN 
Boneless chicken breast, 2 breasts
Dijon mustard
1/4 lb. Provolone cheese

Cut chicken breast in half, filet each piece down the center, this will give you eight pieces. Place chicken on a glass Pyrex dish. Spread Dijon mustard over chicken. Bake at 350 degrees for a good 15 to 20 minutes until chicken is white. Take out of oven, put Provolone cheese over chicken. Return to oven for about 5 minutes until cheese is melted. It's quick, easy and delicious.

Serves 4.
