SQUASH CASSEROLE 
2 lb. yellow squash
1 med. onion, chopped
1/2 stick butter
1/4 c. bread crumbs
1 egg, beaten
1 1/2 c. Cheddar cheese, grated
Salt & pepper
1 tube Ritz crackers, crumbled
1/4 c. butter, melted

Cook the squash and onion in a small amount of water until tender. Drain. Melt 1/2 stick butter and pour over the bread crumbs. Mix squash, onion, crumbs and egg together. Add cheese, salt and pepper. Place in a casserole dish. Mix cracker crumbs and butter. Sprinkle on top of squash. Bake at 350 degrees for 20-25 minutes.
