SPANISH RICE 
3 tbsp. melted butter
1 tsp. salt
1 onion, chopped
1 can stewed tomatoes
1/2-1 can diced Rotel tomatoes (depends on how hot you like it)
1 1/2 c. water
1/2 c. rice
Pepper to taste

Brown onion and rice in butter. Add salt, stewed tomatoes and Rotel. Then add water and simmer for about 30-45 minutes, stirring occasionally.
