SCALLOPED CHICKEN CASSEROLE 
3 lb. chicken, cooked deboned and cubed (or 1 qt. chicken pieces)
3/4 c. butter, melted
1 tsp. finely chopped onion
3 eggs, beaten
Dash of pepper
1 1/2 qt. bread crumbs
4 tbsp. chicken fat
4 tbsp. flour
1/4 c. cream
3/4 tsp. salt
1/2 c. chopped celery
1 qt. chicken broth

Mix together lightly all ingredients, except for chicken. Alternately layer mixture and chicken in a casserole dish. Bake at 375 degrees until hot. NOTE: Turkey may be used instead of chicken if desired.
