CORNMEAL GRIDDLE CAKES 
2 c. cornmeal
1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
2 eggs
2 c. buttermilk
2 tbsp. butter
1 1/2 tsp. salt

Sift flour, cornmeal, baking powder, soda and salt; then sift again. Beat eggs well, add the buttermilk and combine with the dry ingredients. Beat until smooth and add melted butter. Bake on a hot griddle. These are good served with syrup of your choice.
